- Glucose has several -OH groups in its structure that can undergo hydrogen bonding to water. Hydrogen bonding occurs when a H that is bonded to O in one molecule is attracted to the O in another molecule by very strong polar attractions. The numerous hydrogen bonds between glucose and water result in a high solubility of glucose in water.
